Balance - One of the keys to good beer

Often we are asked why we don’t produce beers with more extreme characteristics such as high alcohol, super hop bitterness, etc. While it is easy to produce beers with one pronounced characteristic, they, generally, are not a pleasure to drink.
“Balance” is a word too little used in the brewing industry. Two striking examples of how balance works are with out IPA and Imperial Stout. With an IBU of 56, there is no question hop bitterness is present in our IPA, but the body supplied by the malt changes the bitterness from harshness to freshness. And our Victory barley malt adds another dimension by imparting a certain nut flavor making the beer far more interesting. The balance of body, and tast seperates our IPA from many more “one dimensional IPA’s. Our Imperial Stout is more like the Scandinavian Imperial Stout’s than the more commonly thought of Russian Imperial Stout. Not quite as high in alcohol as the Russian version,, our stout has become very popular because of the richness of coffee-chocolate flavors from highly toasted barley backed by silky smoothness of our carmelized malt. The creamy head forecasts what you can expect….Rich flavors balanced with the smooth, yes, silky body of the beer….And unlike the Russian style, the alcohol is restrained enough not to dominate and subdue the flavors. As many have said, “It is a beer to savor”. Making beers with real balance isn’t easy but we are committed to doing that for you.
